Barramundi with Lemon Butter Sauce

Ingredients
2 200g barramundi fillets
2 teaspoons olive oil
2 tablespoons butter
1 clove of garlic, minced
2 tablespoons lemon juice
3/4 tablespoon dried basil leaves
Salt to taste
Method
Step 1
Heat saucepan to medium heat. Cook the minced garlic in butter for until fragrant and golden.
Step 2
Stir in the lemon juice and 3/4 of the dry basil.
Step 3
Add salt to taste. Remove from heat and set aside.
Step 4
Pat the barramundi fillets dry and coat both sides with olive oil.
Step 5
Turn frying pan to medium-high heat. Pan fry one side about 3min, till edges turn golden brown. Flip and cook the other side until fish is cooked through.
Step 6
Transfer the barramundi to a serving dish. Spoon sauce over the fillets and sprinkle the remaining basil on top.
